Description
A quick, elegant, and low-carb weeknight dinner featuring flaky salmon and charred asparagus roasted on a single sheet pan with a rich garlic butter sauce.
Ingredients
- 4 salmon fillets (about 6 ounces each)
- 3 tablespoons extra virgin olive oil (divided)
- 4 tablespoons unsalted butter, melted
- 4–5 cloves garlic, minced
- 1 large lemon (zest and juice)
- 1 teaspoon dried dill
- Sea salt and black pepper to taste
- 1 bunch asparagus spears (about 1 pound)
Instructions
- Preheat oven to 400°F (200°C). Line a large 18×13 inch rimmed baking sheet with parchment paper or aluminum foil.
- Rinse asparagus and pat dry. Snap off or trim the woody ends of the spears.
- Pat salmon fillets dry with paper towels and place on the prepared baking sheet. Season both sides lightly with sea salt and black pepper.
- In a small bowl, whisk together the melted butter, 2 tablespoons olive oil, minced garlic, lemon zest, and dried dill.
- Drizzle 1 tablespoon olive oil over the asparagus and toss to coat. Arrange asparagus on one side of the baking sheet.
- Drizzle half of the garlic butter mixture over the asparagus and the remaining half over the salmon fillets, ensuring the sauce gets under the edges of the fish.
- Bake for 15-18 minutes, or until the salmon flakes easily with a fork and is opaque throughout, and asparagus is tender-crisp.
- Remove from oven, squeeze fresh lemon juice over everything, and garnish with fresh parsley or extra dill if desired. Serve immediately.
Notes
Do not overcrowd the pan to ensure proper roasting. For best results, use wild-caught Alaskan salmon. If using frozen salmon, thaw completely and pat very dry. Salmon continues to cook slightly after removal from the oven, so it is better to be slightly undercooked than dry. Internal temperature should reach 145°F (63°C) for safety, though 135°F (57°C) is preferred for juiciness.
