A silky, refreshing, and completely no-bake dessert that swaps heavy cream for full-fat coconut milk. This dairy-free and gluten-free panna cotta features fresh mango puree and lime zest for a tropical flavor profile that is light enough for summer evenings.

  • 2 cans (13.5 oz each) full-fat coconut milk
  • 2 large very ripe mangoes (about 400g flesh)
  • 2 teaspoons unflavored gelatin powder
  • 3 tablespoons cold water (for blooming gelatin)
  • 1 large lime (zest and juice)
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Bloom the gelatin: Sprinkle gelatin powder over 3 tablespoons of cold water in a small bowl and let sit for 5-10 minutes until it forms a spongy mass.
  2. Puree the mango: Peel and chop mangoes, then blend in a food processor or blender until completely smooth. Add a splash of water or lime juice if needed to help blending.
  3. Warm the coconut milk: Pour coconut milk into a small saucepan. Add sugar, salt, and vanilla extract. Heat over medium-low heat, stirring constantly, until warm (120-130°F) and sugar is dissolved. Do not boil.
  4. Dissolve the gelatin: Remove saucepan from heat. Add the bloomed gelatin mixture and whisk vigorously for 1-2 minutes until completely dissolved and smooth. Strain if necessary to remove any undissolved bits.
  5. Combine and flavor: Stir in the mango puree, lime juice, and lime zest. Taste and adjust sweetness or lime if needed.
  6. Pour and chill: Ladle mixture into ramekins or serving glasses. Cover loosely and refrigerate for at least 4 hours, or overnight, until set.
  7. Serve: Top with fresh mango cubes, mint leaves, or coconut cream. Serve chilled directly from the ramekins or unmold by dipping in hot water.

Notes

Do not boil the coconut milk as it can affect the texture. Ensure gelatin is fully dissolved to avoid graininess. For a vegan version, substitute gelatin with agar-agar. The dessert tastes better after sitting overnight as flavors meld. Do not freeze as texture may separate.
