Description

  • 1 large bunch carrots (peeled and cut into sticks, approx. 200g)
  • 2 medium cucumbers (sliced into half-moons or sticks, approx. 300g)
  • 2 medium red bell peppers (seeded and cut into strips, approx. 250g)
  • 1 pint cherry tomatoes (halved, approx. 250g)
  • 1 small head red cabbage (thinly sliced or shredded, approx. 150g)
  • 1 cup snap peas or sugar snap peas (trimmed, approx. 100g)
  • 1 container hummus (1520 oz / 425-565g)
  • 2 large pita breads (cut into triangles, approx. 150g)
  • 1/2 cup kalamata or green olives (pitted, approx. 75g)
  • 1/2 cup feta cheese (crumbled, approx. 75g, optional)
  • 2 tablespoons fresh parsley or mint (chopped, approx. 10g)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Wash all vegetables thoroughly. Peel carrots if using large ones, then cut into sticks. Slice cucumbers into half-moons or sticks. Remove seeds from bell peppers and cut into strips. Halve cherry tomatoes. Shred red cabbage. Trim snap peas.
  2. Preheat toaster oven or regular oven to 350°F (175°C). Cut pitas into triangles and arrange on a baking sheet. Toast for 3-5 minutes until golden and crisp. Let cool completely.
  3. Scoop about 1/4 cup of hummus into a small container or compartment within the lunch box to prevent leaking.
  4. Arrange the prepared vegetables in the remaining compartments of the lunch box, grouping by color for visual appeal.
  5. Add olives and feta cheese to small separate sections or sprinkle over veggies. Drizzle with olive oil and lemon juice if desired. Add toasted pita triangles to the largest compartment or a separate bag. Close lid tightly.

Notes

Ensure vegetables are completely dry before packing to maintain crispness. Toast pita thoroughly and let cool to prevent sogginess. Use a sealed container for hummus to avoid leaks. Veggies can be prepped up to 4 days in advance if stored dry.
