  • 1 cup (120g) dried figs, chopped (Calimyrna or Black Mission)
  • 1 cup (240ml) heavy cream, cold
  • 1 tablespoon powdered sugar
  • 1 cup roasted figs, halved
  • Pinch of sea salt flakes
  • 1 teaspoon vanilla bean paste or extract
  • 1 cup buttermilk (or milk with 1 tbsp lemon juice)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C). Halve fresh figs or chop dried figs. Toss with 1 tsp honey and a pinch of salt, spread on a baking sheet, and roast for 10-15 minutes until soft and caramelized. Let cool completely.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and a pinch of salt. If using chopped dried figs, toss them with 1 tbsp of this flour mixture to prevent sinking.
  3. In a large bowl, beat softened butter and honey together until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, beating well after each addition. Add vanilla. Scrape down the sides of the bowl.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients. Mix until just combined. Do not overmix. Gently fold in the roasted figs.
  6. Pour batter into two greased and lined 8-inch round cake pans. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick comes out clean. Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  7. In a cold bowl, whip heavy cream, powdered sugar, and 1 tbsp honey until stiff peaks form. Be careful not to over-whip. Fold in half of the roasted figs.
  8. Assemble the cake: Place one layer on a plate, spread frosting on top, add second layer. Frost top and sides. Decorate with remaining roasted figs, sea salt flakes, and edible flowers.

Notes

Roast figs to concentrate flavor rather than boiling. Ensure ingredients are at room temperature for proper emulsification. Do not overmix the batter to avoid a tough cake. Chill the mixing bowl for frosting to ensure it holds its shape. The cake tastes better the next day as flavors meld.
