Description

A creamy, tangy small-batch whipped feta dip made in just five minutes, drizzled with spicy-sweet hot honey and topped with crunchy toasted pistachios. Perfect for one or two people with no waste.


Ingredients

  • 4 ounces feta cheese (block, packed in brine)
  • 2 tablespoons full-fat plain Greek yogurt
  • 1 teaspoon freshly squeezed lemon juice
  • 1 small clove garlic, minced or grated
  • 1 teaspoon extra virgin olive oil
  • 23 tablespoons hot honey
  • 2 tablespoons shelled pistachios, toasted
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon fresh thyme or oregano, chopped
  • Crackers or pita chips for serving

Instructions

  1. Peel and mince the garlic clove finely, or grate it directly into the food processor bowl.
  2. Add the crumbled feta cheese, Greek yogurt, lemon juice, minced garlic, and olive oil to a mini food processor or blender.
  3. Pulse a few times to break up the feta, then run the machine continuously for 1-2 minutes until the mixture is smooth, creamy, and mousse-like. Scrape down sides if needed.
  4. While the dip whips, heat a small skillet over medium-low heat. Toast the pistachios in a single layer for 3-4 minutes until nutty and lightly golden. Transfer to a plate to cool.
  5. Transfer the whipped feta to a small serving bowl and create swirls on top with the back of a spoon.
  6. Drizzle generously with hot honey. Sprinkle with toasted pistachios, red pepper flakes, and fresh herbs.
  7. Serve immediately with pita chips, crackers, or crusty bread.

Notes

Use block feta packed in brine for best texture; avoid pre-crumbled feta which contains anti-caking agents. If you don’t have hot honey, mix regular honey with red pepper flakes. The dip can be made up to 24 hours ahead and stored in the fridge; let it sit at room temperature for 15 minutes before serving. Do not freeze as the texture may become grainy.
