Ingredients

  • 1 pint (250g) fresh mozzarella balls (bocconcini)
  • 2 cups (300g) cherry tomatoes
  • 1 cup fresh basil leaves (loosely packed)
  • 1/2 cup (120ml) thick balsamic glaze
  • 810 wooden skewers
  • 1 teaspoon olive oil (optional)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Soak wooden skewers in a bowl of water for at least 10 minutes to prevent burning.
  2. Preheat the oven broiler to high. Line a baking sheet with parchment paper or foil.
  3. Thread ingredients onto skewers in an alternating pattern: cherry tomato, mozzarella ball, and folded basil leaf. Do not pack too tightly.
  4. Place skewers on the prepared baking sheet.
  5. Broil skewers for 2-3 minutes, watching closely, until the mozzarella is melted and golden and the basil is fragrant and slightly crispy.
  6. Remove from oven and immediately drizzle with balsamic glaze while hot.
  7. Sprinkle with a pinch of sea salt if desired and serve immediately.

Notes

Soak wooden skewers for at least 10 minutes to prevent them from catching fire under the broiler. Use thick balsamic glaze rather than regular vinegar to ensure it sticks. If your broiler runs hot, check skewers after 2 minutes. These are best served immediately but can be stored in the fridge for up to 2 days.
