- 1 tablespoon dried culinary lavender
- 1 cup blueberries (fresh or frozen)
- 1/2 cup water
- 2 tablespoons maple syrup
- 1.5 cups oat milk (unsweetened)
- 2 shots espresso or 1/2 cup strong brewed coffee
- Optional garnish: fresh blueberries and lavender sprig
Instructions
- In a small saucepan, combine water, blueberries, dried lavender, and maple syrup.
- Heat over medium-high until bubbling, then reduce to low and simmer gently for 5 minutes, mashing berries occasionally to release juices.
- Remove from heat and strain the mixture through a fine-mesh strainer into a bowl or jar, pressing on solids to extract liquid. Discard solids.
- While syrup simmers, brew espresso or strong coffee.
- Heat oat milk in a saucepan over medium-low until steaming (do not boil).
- Froth the oat milk using a handheld frother, whisk, or by shaking in a sealed jar until creamy and foamy.
- Add 1-2 tablespoons of blueberry lavender syrup to the bottom of a mug.
- Pour in the hot coffee and stir gently to combine.
- Slowly pour the frothed oat milk over the coffee to create layers.
- Garnish with fresh blueberries and a sprig of lavender if desired.
Notes
Do not over-steep the lavender as it can taste like soap; 5 minutes is perfect. Oat milk should not be boiled to prevent separation. The syrup can be made in batches and stored in the fridge for up to 2 weeks or frozen for 3 months. For an iced version, use cold brew coffee and cold oat milk.
