Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, combine softened butter, brown sugar, and granulated sugar. Mix vigorously for 1-2 minutes until smooth and creamy.
- Add the egg and vanilla extract. Mix until fully combined and the mixture is smooth and glossy.
- Add the flour, baking soda, and salt. Mix on low speed or by hand until just combined. Do not overmix.
- Fold in the chocolate chips, reserving a small handful for topping if desired.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until edges are lightly golden but centers still look soft.
- Remove from oven and let cookies sit on the pan for 5 minutes to set.
- Sprinkle with flaky sea salt if using, then transfer to a cooling rack to cool completely or serve warm.
