Ultra Fudgy One-Bowl Chocolate Chip Cookies

  • Author: Harper
  • Total Time: 20 minutes
  • Yield: 24 cookies 1x

Description

These ultra fudgy one-bowl chocolate chip cookies are dense, chewy, and easy to make with minimal cleanup. They feature crisp edges and a soft, brownie-like center, perfect for weeknight baking or impressing guests.

Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup (170g) semi-sweet chocolate chips
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine softened butter, brown sugar, and granulated sugar. Mix vigorously for 1-2 minutes until smooth and creamy.
  3. Add the egg and vanilla extract. Mix until fully combined and the mixture is smooth and glossy.
  4. Add the flour, baking soda, and salt. Mix on low speed or by hand until just combined. Do not overmix.
  5. Fold in the chocolate chips, reserving a small handful for topping if desired.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, until edges are lightly golden but centers still look soft.
  8. Remove from oven and let cookies sit on the pan for 5 minutes to set.
  9. Sprinkle with flaky sea salt if using, then transfer to a cooling rack to cool completely or serve warm.

Notes

Ensure butter is softened but not melted. Measure flour by spooning and leveling to avoid dry cookies. Do not overbake; centers should look slightly underdone as they will set while cooling. Dough can be chilled for 30 minutes for better shape, or frozen for later use.
