Description

A refreshing, fizzy, and completely sugar-free summer mocktail made with frozen raspberries, fresh lime juice, and sparkling water. It’s ready in under five minutes and provides a bright, tart flavor without the sugar crash.


Ingredients

  • 1 cup frozen raspberries (150g)
  • 2 tablespoons unsweetened raspberry syrup (30ml)
  • 2 fresh limes (juiced, approx. ¼ cup or 60ml)
  • 12 teaspoons Stevia or Erythritol (optional, to taste)
  • 2 cups sparkling water (480ml)
  • Ice cubes
  • 46 sprigs fresh mint leaves
  • 23 lime wheels for garnish

Instructions

  1. Chill highball or Collins glasses in the freezer for 10 minutes before serving.
  2. Fill the chilled glasses about ¾ full with ice cubes.
  3. Add the frozen raspberries to the bottom of the glass. Gently muddle them with the back of a spoon to release juices, but do not turn them into a pulp.
  4. Pour in the fresh lime juice and sugar-free raspberry syrup. If using, add the Stevia or Erythritol.
  5. Taste the mixture at the bottom of the glass and adjust sweetness or tartness as needed.
  6. Slowly pour the chilled sparkling water over the back of a spoon to preserve the bubbles and create a layered effect.
  7. Fill the glass to the top.
  8. Garnish with a sprig of fresh mint and a lime wheel.
  9. Serve immediately while cold and fizzy.

Notes

Use frozen raspberries to chill the drink without diluting it. Ensure sparkling water is very cold to maintain fizz. The base mixture (raspberry syrup, lime juice, sweetener) can be stored in the fridge for up to 3 days; add sparkling water fresh when serving to prevent flatness. For a layered look, pour sparkling water slowly over the back of a spoon.
