Description

A simple, savory snack made from sourdough discard and everything bagel seasoning. These zero-knead crackers are crisp, shelf-stable, and perfect for using up starter without the stress of bread baking.


Ingredients

  • 1 cup (240g) sourdough discard
  • 1 to 1.5 cups (120-180g) all-purpose flour
  • 4 tablespoons (60g) unsalted butter, melted
  • 2 tablespoons everything bagel seasoning
  • ½ teaspoon kosher salt
  • 12 tablespoons water (only if needed)
  • ¼ cup grated Parmesan (optional)

Instructions

  1. In a large mixing bowl, combine sourdough discard, melted butter, salt, and everything bagel seasoning. Stir until evenly distributed.
  2. Add flour one cup at a time, stirring until the dough comes together. It should be soft but not sticky. Add water one tablespoon at a time if too crumbly, or more flour if too sticky.
  3. Cover the bowl with a damp towel or plastic wrap and let the dough rest for 10 minutes to allow flour hydration and gluten relaxation.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Place dough on a lightly floured surface and roll it out as thin as possible (approx. 1/16th inch thick).
  6. Cut the dough into small squares or desired shapes using a pastry wheel or sharp knife.
  7. Transfer cut crackers to the prepared baking sheet.
  8. Brush tops lightly with water or melted butter and sprinkle with extra everything bagel seasoning, pressing gently to adhere.
  9. Bake for 15-20 minutes, rotating the pan halfway through, until edges are golden brown.
  10. Remove from oven and let cool on the baking sheet for at least 15 minutes, then transfer to a wire rack to cool completely until crisp.

Notes

Roll the dough very thin for crisp crackers. Store in an airtight container at room temperature for up to 2 weeks. If they soften, recrisp in a 300°F oven for 5 minutes. Do not freeze as texture suffers.
