- 1 teaspoon vanilla extract
- ½ cup (100g) granulated sugar
- 2 teaspoons ground cinnamon
- Pinch of salt
- Extra butter or neutral oil for greasing the pan
Instructions
- Ensure eggs and milk are at room temperature. Melt butter and let it cool slightly.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and a pinch of salt.
- In a large bowl, whisk the sourdough discard, eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined; leave the batter slightly lumpy to avoid tough pancakes.
- Heat a non-stick skillet or griddle over medium heat. Test readiness by flicking water drops onto the surface; they should sizzle and dance.
- Lightly grease the pan. Scoop about ¼ cup of batter per pancake.
- Cook for 2-3 minutes until bubbles form on the surface and pop, leaving holes that don’t fill in. Edges should look set.
- Flip gently and cook for another 1-2 minutes until golden brown.
- While pancakes cook, mix granulated sugar, cinnamon, and a pinch of salt in a small bowl.
- Immediately sprinkle the cinnamon sugar mixture onto hot pancakes as they finish cooking to help the sugar adhere.
