  • ½ cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup (120ml) buttermilk
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (50g) rainbow jimmies (sprinkles)
  • 1 cup (240ml) heavy cream, chilled
  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 6-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition. Scrape down the bowl sides. Add 2 teaspoons vanilla extract and mix until combined.
  5. Turn mixer to low. Add dry ingredients in two parts, alternating with buttermilk, starting and ending with dry ingredients. Mix just until combined.
  6. Toss sprinkles in a teaspoon of the flour mixture, then gently fold them into the batter.
  7. Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then release the springform and transfer to a cooling rack to cool completely.
  9. Once cool, whip heavy cream, powdered sugar, and 1 teaspoon vanilla on high speed until stiff peaks form.
  10. Spread whipped cream frosting over the top of the cake and decorate with extra sprinkles if desired.

Notes

Ensure all ingredients are at room temperature for best emulsification. Toss sprinkles in flour before folding in to prevent sinking. Do not overmix the batter. The cake is best served fresh within 24 hours due to the whipped cream frosting. Unfrosted cake layers can be frozen for up to 3 months.
