Instructions

  1. Preheat oven to 350°F (175°C). Grease a 13×9 inch baking dish or line a large rimmed sheet pan with parchment paper and spray with oil.
  2. Dice the bell peppers, onion, and ham into small, uniform pieces (about 1/4-inch chunks). Place them in a large mixing bowl.
  3. In a separate large bowl, crack the eggs and add the milk, salt, pepper, and garlic powder. Whisk vigorously for 30-60 seconds until uniform and slightly frothy.
  4. Pour the egg mixture over the diced vegetables and ham. Toss gently to coat evenly, then pour the entire mixture into the prepared baking dish.
  5. Sprinkle the shredded cheddar cheese evenly over the top, pressing it down slightly.
  6. Bake for 20-25 minutes until the edges are golden brown and the center is set (it should jiggle slightly like gelatin, not slosh like liquid).
  7. Remove from oven and let rest for 5 minutes to allow the eggs to set further.

Notes

For make-ahead prep, mix the dry ingredients (veggies, ham, cheese) the night before and store in the fridge. In the morning, whisk the eggs and pour over the mix before baking.
