Savory Breakfast Quesadillas with Egg

  • Author: Harper
  • Total Time: 10 minutes
  • Yield: 4 servings 1x

Description

A fast, savory breakfast or weeknight dinner featuring crispy flour tortillas, fluffy scrambled eggs, and melted cheddar cheese. Ready in just 10 minutes with minimal prep.

Ingredients

Scale
  • 8 large flour tortillas (10-inch / 25cm)
  • 6 large eggs
  • 2 cups (200g) shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika
  • Optional: 1 cup diced ham, 1 can black beans (drained), 1/2 cup salsa, 1 avocado (sliced), sour cream for topping

Instructions

  1. Whisk eggs in a bowl with a pinch of salt, pepper, and smoked paprika. Set aside.
  2. Heat a 10-inch non-stick skillet over medium heat and add butter.
  3. Pour in eggs and stir gently with a spatula until just set but still slightly wet. Remove from pan and set aside.
  4. Wipe out the pan if needed. Place one tortilla in the skillet.
  5. Sprinkle half the cheese on one half of the tortilla, add a layer of scrambled eggs, and any optional toppings.
  6. Top with another layer of cheese and place the second tortilla on top. Press down gently.
  7. Cook for 2-3 minutes until the bottom is golden brown and crispy.
  8. Carefully flip with a spatula and cook for another 2-3 minutes until the other side is golden and cheese is melted.
  9. Remove to a cutting board and let rest for 1 minute.
  10. Slice into wedges and serve immediately with salsa, sour cream, or guacamole.

Notes

Shred your own cheese for better melting; pre-shredded cheese contains anti-caking agents. Do not overfill the quesadilla to prevent breaking during flipping. Use medium heat to avoid burning the tortilla before the cheese melts. Let the quesadilla rest for 1 minute after cooking to allow the cheese to set.
