  • 10 ounces (280g) regular white marshmallows
  • 6 cups (about 170g) original Kellogg’s Rice Krispies cereal
  • 1/2 teaspoon salt
  • 1/2 cup (60g) rainbow sprinkles (standard jimmies)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Lightly grease a 9×13 inch baking pan with butter or non-stick spray. If using parchment paper, line the pan and grease the top.
  2. In a large pot over medium-low heat, melt the butter. Add the marshmallows and stir constantly until smooth and creamy (about 5-7 minutes). Do not let the bottom burn.
  3. Remove the pot from heat. Add the Rice Krispies cereal and salt, stirring gently until every piece is coated.
  4. Fold in the rainbow sprinkles and vanilla extract (if using) until distributed evenly.
  5. Transfer the mixture to the prepared pan. Wet your hands or a spatula with water and press the mixture down firmly and evenly into the corners.
  6. Preheat oven to 350°F (175°C). Bake for 12-15 minutes until the top is lightly golden brown. Do not overbake.
  7. Remove from oven and let cool completely in the pan for at least 30 minutes.
  8. Once cool, cut into squares (yields 24 pieces).

Notes

Keep heat low to prevent burning marshmallows. Press mixture firmly to ensure bars hold together. Cool completely before cutting for clean slices. Store in an airtight container at room temperature for up to 3 days. Can be frozen for up to 3 months.
