- 1 medium yellow onion, diced
- 8 oz cremini or button mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 2 tablespoons gluten-free flour (1:1 blend with xanthan gum)
- 1.5 cups beef broth (low-sodium)
- 1 teaspoon Worcestershire sauce (gluten-free)
- 1/2 cup sour cream (full-fat or dairy-free alternative)
- 1 teaspoon Dijon mustard
- 2 tablespoons fresh parsley, chopped
- Black pepper to taste
- Gluten-free egg noodles, mashed potatoes, or cauliflower rice for serving (optional)
Instructions
- Prep ingredients by chopping the onion, slicing mushrooms, and mincing garlic.
- Heat butter or oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if desired, then remove beef and set aside.
- Reduce heat to medium. Add diced onion to the skillet and cook for 3-4 minutes until softened. Add mushrooms and cook for another 3-4 minutes until browned. Add garlic and cook for 1 minute until fragrant.
- Sprinkle gluten-free flour over the vegetables and stir constantly for 1-2 minutes to create a roux.
- Slowly pour in beef broth while stirring to prevent lumps. Add Worcestershire sauce and Dijon mustard. Simmer for 3-4 minutes until the sauce thickens slightly.
- Reduce heat to low. Stir in sour cream and return the cooked beef to the pan. Simmer gently for 2 minutes to combine and thicken further.
- Taste and adjust salt and pepper as needed.
- Serve immediately over gluten-free egg noodles, mashed potatoes, or cauliflower rice, topped with fresh parsley and black pepper.
Notes
Do not skip searing the beef for maximum flavor. Add sour cream off high heat to prevent curdling. If the sauce is too thick, add a splash of broth or pasta water. If too watery, simmer longer. This recipe does not freeze well due to the dairy content.
