One Pan Honey Mustard Chicken: Easy Sheet Pan Dinner

Description

A quick and easy weeknight dinner featuring tender chicken breasts and roasted broccoli coated in a sticky, sweet, and tangy honey mustard glaze, all cooked on a single sheet pan for minimal cleanup.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 teaspoon kosher salt
  • Generous crack of black pepper
  • 0.25 cup honey
  • 2 tablespoons whole grain mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 3 cups broccoli florets
  • Salt and pepper for veggies

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch rimmed baking sheet with parchment paper.
  2. In a mixing bowl, toss chicken breasts with vegetable oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Place chicken breasts on one side of the prepared sheet pan, leaving space between them.
  4. Chop broccoli into florets and toss with salt and pepper. Spread veggies on the other side of the sheet pan.
  5. In a small bowl, whisk together honey, whole grain mustard, apple cider vinegar, and soy sauce to create the glaze.
  6. Bake the sheet pan for 15 minutes.
  7. Remove pan from oven. Brush chicken generously with half of the glaze. Drizzle remaining glaze over veggies and toss to coat.
  8. Return to oven and bake for another 10-12 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and edges are slightly charred.
  9. Remove from oven and let chicken rest for 5 minutes before slicing against the grain.
  10. Serve with roasted veggies, spooning any extra glaze from the pan over the top.

Notes

Pat chicken dry before seasoning for better browning. Do not crowd the pan to ensure roasting instead of steaming. Use a thermometer to prevent dry chicken; pull at 160°F as residual heat will bring it to 165°F. Glaze twice to prevent sugar burning. Store leftovers in an airtight container in the fridge for up to 4 days.
