- 2 tablespoons sugar
- 2 tablespoons butter, melted
- 2 ½ to 3 cups all-purpose flour
- 1 teaspoon salt
- 8 cups water (for boiling)
- ⅓ cup baking soda
- ½ cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon
- 3 tablespoons butter, melted (for brushing)
- Flaky sea salt (optional, for garnish)
Instructions
- In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Add melted butter and salt to the yeast mixture. Stir to combine.
- Add flour one cup at a time, stirring until too thick to stir, then knead by hand for 2-3 minutes until smooth and elastic.
- Cover the bowl and let the dough rise in a warm spot for 30 minutes, or until doubled in size.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the dough and divide into 24 equal pieces. Roll each into a smooth ball and place on the baking sheet.
- Bring 8 cups of water and baking soda to a boil in a large pot.
- Boil 6-8 pretzel bites at a time for 30 seconds per side. Remove with a slotted spoon and place back on the baking sheet.
- Bake for 12-15 minutes until deep golden brown.
- While hot, brush bites with melted butter and toss in the cinnamon sugar mixture until coated.
- Serve warm.
Notes
Do not rush the rise; the dough must double in size. Boil time is crucial: 30 seconds per side ensures authentic pretzel flavor without toughness. Use fresh cinnamon for best flavor. Keep finished bites warm in a 200°F oven if serving for a party.
