Description
A hearty, one-pot German-inspired dish featuring juicy pork bratwurst braised in malty beer with sweet caramelized onions and tangy sauerkraut.

- 6–8 links (1.5–2 lbs) high-quality pork bratwurst
- 12 oz (355ml) German-style lager, pilsner, or Helles
- 3 large yellow onions, sliced into thin half-moons
- 16 oz (450g) refrigerated sauerkraut, drained and squeezed dry
- 2 tablespoons unsalted butter
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 3 cloves garlic, minced
- 1–2 bay leaves
- Salt and black pepper to taste
- Crusty bread or pretzel rolls for serving
- Whole grain mustard for dipping
- Apple slices for serving
Instructions
- Slice onions into thin half-moons, mince garlic, and drain/squeeze sauerkraut. Measure beer and mustard.
- Heat 2 tablespoons butter in a large skillet or Dutch oven over medium heat. Add onions and a pinch of salt. Cook slowly for 20-25 minutes until golden brown and soft, stirring occasionally. Add brown sugar and cook for 2 more minutes. Remove onions and set aside.
- Increase heat to medium-high. Add bratwursts to the same pan. Sear for 2-3 minutes on each side until browned all over. Do not prick the casings.
- Pour in the beer, scraping up brown bits from the bottom. Add bay leaves. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, flipping halfway through, until brats are cooked through.
- Remove lid. Add drained sauerkraut and minced garlic. Stir to combine with the beer sauce. Simmer uncovered for 5 minutes.
- Stir in Dijon mustard. Taste and adjust salt and pepper. Return caramelized onions to the pan and toss gently to heat through.
- Serve immediately on a platter with crusty bread or pretzel rolls.
Notes
Do not prick the bratwurst casings to retain juices. Use refrigerated sauerkraut for better texture. If using non-alcoholic beer substitute, use beef broth with vinegar. For a lighter version, use chicken brats and reduce butter. Toast buns separately to prevent sogginess.
