  • 1 tablespoon rum extract or apple brandy
  • 2 tablespoons breadcrumbs
  • 1 package phyllo dough, thawed
  • 1/2 cup unsalted butter, melted
  • Powdered sugar, for dusting
  • Optional: 1/2 cup raisins, soaked in warm water
  • Optional: 2 tablespoons candied ginger, chopped

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss sliced apples with brown sugar, cinnamon, cardamom, nutmeg, rum extract, raisins (if using), and toasted nuts. Let sit for 15-20 minutes to draw out moisture, then drain excess liquid.
  3. Let phyllo dough come to room temperature for 30 minutes.
  4. Lay one sheet of phyllo on a counter and brush lightly with melted butter. Stack 4-5 sheets, slightly offset, brushing each with butter.
  5. Sprinkle breadcrumbs over the center third of the dough to prevent sogginess.
  6. Spoon the apple filling onto the breadcrumbs in a log shape. Roll the dough over the filling, tucking in the sides like a burrito, and place seam-side down on the baking sheet.
  7. Brush the top generously with remaining melted butter.
  8. Bake for 35-40 minutes until deep golden brown and puffed. Tent with foil if browning too quickly.
  9. Cool for at least 10 minutes to allow filling to set.
  10. Dust with powdered sugar and slice into thick pieces to serve warm.

Notes

Use Granny Smith apples to hold their shape. Keep phyllo dough covered with a damp towel while working to prevent drying out. The breadcrumbs are essential to absorb excess apple juice and prevent a soggy bottom. Let the strudel cool before slicing to ensure clean cuts.
