  • 1 sleeve (about 20 crackers) graham crackers, crushed
  • ½ cup (120ml) heavy cream, cold (optional, for fluffiness)
  • Optional toppings: whipped cream, cinnamon, caramel sauce

Instructions

  1. Crush the graham crackers into a mix of fine crumbs and small chunks using a food processor or a zip-top bag with a rolling pin. Reserve 2 tablespoons of chunks for topping.
  2. If using heavy cream, whip it in a separate bowl until soft peaks form, then set aside.
  3. In a medium bowl, beat the softened cream cheese on medium-high speed until smooth (about 2 minutes). Scrape down the sides.
  4. Add the sugar, pumpkin puree, pumpkin pie spice, and vanilla extract to the cream cheese. Beat on medium speed until fully combined and smooth.
  5. If using whipped cream, gently fold it into the pumpkin mixture until just combined.
  6. Assemble the parfaits in glasses: start with a layer of graham cracker crumbs, followed by a layer of pumpkin filling. Repeat layers until the glass is full, ending with a dollop of filling.
  7. Cover the glasses and refrigerate for at least 2 hours, or ideally overnight, to set.
  8. Before serving, garnish with reserved graham cracker chunks, a pinch of cinnamon, or whipped cream.
