Description

A forgiving, flavorful, and incredibly easy slow cooker beef recipe that requires zero prep work. The chuck roast becomes tender and pull-apart perfect, served with a rich, buttery pepperoncini gravy.


Ingredients

  • 34 lbs Chuck Roast
  • 1 packet Dry Ranch Dressing Mix (about 1 ounce)
  • 1 packet Dry Au Jus Gravy Mix (about 1 ounce)
  • 1 jar Pepperoncini Peppers (whole)
  • 4 tablespoons Unsalted Butter
  • Salt and Black Pepper to taste

Instructions

  1. Pat the chuck roast dry with paper towels and trim off any large, hard chunks of fat, leaving the marbling.
  2. Place the roast in a 6-quart slow cooker.
  3. Sprinkle the dry ranch dressing mix evenly over the top of the roast.
  4. Sprinkle the dry au jus gravy mix evenly over the roast.
  5. Drain the jar of pepperoncini peppers, reserving the juice. Pour the drained peppers over the roast.
  6. Pour about half of the reserved pepperoncini juice over the meat.
  7. Cover and cook on LOW for 6-8 hours, until the beef is fork-tender and pulls apart easily.
  8. Remove the roast from the slow cooker and shred the beef using two forks or a hand mixer. Discard any large pieces of fat.
  9. Pour the liquid from the slow cooker into a small saucepan. Skim off excess fat if desired.
  10. Whisk in the reserved pepperoncini juice and 4 tablespoons of butter. Heat over medium heat until the butter melts and the sauce is smooth.
  11. Taste and add salt and pepper if needed.
  12. Pour the gravy over the shredded beef and serve on hamburger buns, over mashed potatoes, or with crusty bread.

Notes

Do not skip the butter in the gravy; it provides a rich, restaurant-quality sheen. Save the pepperoncini juice as it adds essential tang and flavor. Shred the beef while it is still warm for easier handling. If using a Dutch oven in the oven, cook at 300°F (150°C) for 3-4 hours. Check ranch and au jus packets for gluten if necessary.
