Instructions
- In a medium bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, Dijon mustard, red pepper flakes, salt, and black pepper until emulsified.
- Place lamb chops in a large resealable bag or shallow dish. Pour marinade over the meat, ensuring each chop is well-coated. Massage the marinade into the meat.
- Marinate in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor.
- Preheat grill to high heat (450-500°F). Clean grates thoroughly and oil them lightly to prevent sticking.
- Remove lamb from marinade, letting excess drip off. Place chops on the hot grill.
- Grill for 4-6 minutes per side for medium-rare, flipping only once to achieve a good sear.
- Check internal temperature with a meat thermometer; pull chops when they reach 125-130°F.
- Transfer chops to a plate and tent loosely with aluminum foil. Let rest for 5 minutes to redistribute juices.
- Garnish with fresh parsley and serve with lemon wedges.
Notes
Reserve ¼ cup of marinade before adding lamb to use as a basting sauce later; do not use marinade that touched raw meat unless boiled first. Take lamb out of the fridge 20-30 minutes before grilling to ensure even cooking. Lamb is best cooked to medium-rare (130-135°F).
