Description
These easy make-ahead freezer breakfast burritos with sausage, egg, and melty cheese are the ultimate survival tool for busy mornings. They are budget-friendly, customizable, and taste great even after being frozen and reheated.
Ingredients
- 12 large eggs
- 1 pound breakfast sausage (sweet Italian or mild pork)
- 2 cups sharp cheddar cheese, shredded
- 12 large flour tortillas (10-inch)
- 1/4 cup milk or cream
- Salt and black pepper to taste
- Optional: 1 cup diced bell peppers and onions
- Optional: 1 cup hash browns
- Optional: Salsa or hot sauce
- Optional: Fresh cilantro
Instructions
- Heat a large non-stick skillet over medium-high heat. Add the breakfast sausage and cook until browned and cooked through, breaking it up with a spatula.
- If adding vegetables, add diced bell peppers and onions to the pan with the sausage in the last 3-4 minutes of cooking until soft. Drain excess grease.
- While sausage cooks, crack eggs into a mixing bowl. Add milk, salt, and pepper. Whisk vigorously until frothy.
- Push cooked sausage to one side of the pan (or remove to a bowl). Pour eggs into the empty space. Let sit for 10 seconds, then gently push edges toward center until just set but still moist.
- Fold the cooked sausage and veggies into the eggs. Remove from heat.
- Warm tortillas in the microwave for 15-20 seconds or wrap in a damp paper towel to make them pliable.
- Lay a warm tortilla flat. Place about 1/2 cup of the egg mixture in the center. Sprinkle with shredded cheese.
- Fold the sides in, then fold the bottom up and roll tight to form a cigar shape.
- Place each burrito on parchment paper. Roll tightly in parchment, then wrap in plastic wrap or foil, or place in heavy-duty freezer bags, squeezing out all air.
- Label bags with date and contents. Store in freezer for up to 3 months.
- To reheat, remove plastic/foil but leave parchment. Wrap burrito in a damp paper towel and microwave on high for 2-3 minutes, flipping halfway, until hot and cheese is melty.
Notes
Do not overcook the eggs; they should be soft and creamy as they will continue cooking in the microwave. Always use parchment paper to prevent plastic wrap from melting onto the burrito due to sausage grease. Remove all air from freezer bags to prevent freezer burn. Warm tortillas before rolling to prevent cracking.
