Instructions

  1. Spiralize or peel zucchini into noodles. Place in a colander, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Firmly squeeze zucchini with hands or a clean towel to remove as much liquid as possible.
  2. Pat chicken pieces dry and season with salt, pepper, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken in a single layer for 2-3 minutes per side until golden and cooked through. Remove chicken to a plate and set aside.
  4. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
