  • 23 tablespoons powdered erythritol or monk fruit blend
  • 1 cup (150g) frozen raspberries, thawed and drained
  • 1 tablespoon low-carb syrup (optional, for thickening)
  • 2 tablespoons chopped toasted pecans or almonds (optional garnish)
  • 1 tablespoon sugar-free dark chocolate chips (optional garnish)

Instructions

  1. Ensure cream cheese and butter are completely softened to room temperature to avoid lumps.
  2. Place softened cream cheese, butter, vanilla extract, and powdered sweetener into a food processor.
  3. Pulse and blend until the mixture is smooth and creamy, resembling thick frosting. Scrape down sides and blend again if needed.
  4. Thaw frozen raspberries in a microwave-safe bowl for 30-60 seconds until soft.
  5. Mash raspberries with a fork and strain out excess liquid to create a thick, jammy consistency. Stir in low-carb syrup if using.
  6. Spoon or pipe the cream cheese mixture into silicone molds, filling them about 3/4 full.
  7. Dollop a teaspoon of raspberry mixture on top of the cream cheese in each mold.
  8. Use a toothpick to gently swirl the raspberry into the cream cheese for a marbled effect.
  9. Freeze the molds for at least 2-4 hours, or until completely solid.
  10. Pop the fat bombs out of the molds and store in an airtight container in the freezer.
  11. Let sit at room temperature for 2-3 minutes before eating for a creamier texture.
