Instructions
- Preheat oven to 375°F (190°C).
- Peel and slice peaches into 1/2-inch wedges.
- In a large bowl, toss sliced peaches with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let sit for 15 minutes.
- Pour the peach mixture into a 9×13 inch baking dish.
- Drizzle bourbon evenly over the peaches and gently stir to combine.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Cut cold cubed butter into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs with pea-sized butter pieces.
- Pour in heavy cream and vanilla, stirring gently until the dough is shaggy and sticky. Do not overmix.
- Drop spoonfuls of the topping over the peaches, allowing some fruit to peek through.
- Bake for 45-50 minutes until the topping is golden brown and the filling is bubbling vigorously.
- If the top browns too quickly, tent with foil for the last 10 minutes.
- Let cool for at least 20 minutes before serving to allow the sauce to thicken.
- Serve warm with vanilla ice cream.
