A fast, flavor-packed weeknight dinner that combines instant ramen noodles with tangy kimchi, fresh vegetables, and savory sauces. This stir-fry is customizable, forgiving, and ready in under 20 minutes.

- 2 packages (100g each) Instant Ramen Noodles (e.g., Shin or Shin Ramyun)
- 1 cup (150g) Kimchi, drained and squeezed dry
- 2 tablespoons (30ml) Soy Sauce (low-sodium recommended)
- 1 tablespoon (15ml) Toasted Sesame Oil
- 3 cloves Garlic, minced
- 1 teaspoon Ginger, grated
- 1 tablespoon Sesame Seeds, toasted
- 2 stalks Green Onions, sliced (white parts for cooking, green for garnish)
- 1–2 cups Vegetables (e.g., mushrooms, spinach, carrots, cabbage)
- Optional: 1-2 Eggs, beaten
- Optional: ½ cup Protein (tofu, chicken, shrimp)
- Optional: 1 teaspoon Gochujang (Korean chili paste)
- Optional: 1 teaspoon Butter
Instructions
- Prep ingredients: Chop vegetables, mince garlic and ginger, and drain kimchi. Mix soy sauce and sesame oil in a small bowl.
- Cook noodles: Boil water and cook ramen noodles for 2-3 minutes until tender. Drain and rinse under cold water to remove starch. Toss with a little sesame oil to prevent sticking.
- Sauté aromatics: Heat a large skillet or wok over medium-high heat with 1 tablespoon oil. Add garlic and ginger, stirring for 30-60 seconds until fragrant.
- Add vegetables and kimchi: Add harder vegetables (carrots, mushrooms) and stir-fry for 2 minutes. Add kimchi and softer vegetables (spinach, cabbage), cooking for another 2-3 minutes until tender-crisp.
- Combine and sauce: Add cooked noodles to the skillet. Pour sauce over everything and toss to coat evenly. Add ramen seasoning packet if desired. Taste and adjust seasoning.
- Finish and serve: Remove from heat. Drizzle with extra sesame oil if desired. Top with green onions and toasted sesame seeds. Serve immediately.
Notes
Drain kimchi well to prevent a watery stir-fry. Rinse noodles under cold water to prevent clumping. Use high heat for proper stir-frying. Do not overcrowd the pan. Leftovers keep well in the fridge for up to 3 days; reheat with a splash of water. This recipe does not freeze well.
