  • 68 cloves garlic (minced)
  • 1/4 cup dry white wine (Pinot Grigio or Sauvignon Blanc)
  • 2 tablespoons fresh parsley (flat-leaf, chopped)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons avocado oil or olive oil

Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt, pepper, and garlic powder. Let sit at room temperature for 10 minutes.
  2. Mix almond flour, paprika, and a pinch of salt in a shallow bowl.
  3. Press each chop firmly into the almond flour mixture to coat both sides, ensuring the coating adheres well. Shake off excess.
  4. Heat avocado oil in a cast iron skillet over medium-high heat until shimmering.
  5. Sear chops in the pan for 3-4 minutes per side without moving them, until golden brown and crust forms. Internal temperature should reach 145°F.
  6. Remove chops to a plate and cover loosely with foil.
  7. Reduce heat to medium-low. Add butter to the same pan. Once melted, add minced garlic and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not brown.
  8. Deglaze the pan with white wine, scraping up browned bits. Simmer for 1-2 minutes to reduce slightly.
