High-Protein Peanut Butter Overnight Oats

  • Author: Harper
  • Total Time: 8 hours
  • Yield: 4 servings 1x

Description

A simple, no-cook breakfast recipe that combines rolled oats, peanut butter, protein powder, and chia seeds for a creamy, high-protein meal that keeps you full for hours.

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1 cup milk (dairy or plant-based)
  • 1/2 cup Greek yogurt (or dairy-free alternative)
  • 2 tablespoons natural peanut butter
  • 1 scoop vanilla protein powder (whey or plant-based)
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon mini chocolate chips (for topping)
  • 1/2 banana, sliced (for topping)
  • 1 tablespoon crushed peanuts (for topping)

Instructions

  1. Add 1/4 cup rolled oats, 1 tablespoon chia seeds, and 1/4 scoop protein powder to each of four mason jars. Shake gently to distribute.
  2. Pour 1/4 cup milk into each jar. Add 2 tablespoons Greek yogurt, 1 tablespoon natural peanut butter, and honey/maple syrup if using.
  3. Stir vigorously with a spoon or shake in a bottle to dissolve peanut butter and protein powder, ensuring no dry pockets remain.
  4. Seal jars with lids and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats well. Top with sliced bananas, chocolate chips, crushed peanuts, and an extra drizzle of peanut butter.
  6. Serve cold straight from the jar or microwave for 1-2 minutes if preferred warm.

Notes

Use old-fashioned rolled oats, not instant, for the best texture. Stir natural peanut butter well before measuring. For a thicker consistency, reduce milk slightly; for thinner, add more milk. Toppings should be added just before eating to maintain crunch. Can be stored in the fridge for up to 5 days.
