- 2 tablespoons red onion, finely minced (about 20g)
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon extra virgin olive oil
- 2 tablespoons fresh dill or tarragon, chopped
- Kosher salt and freshly cracked black pepper to taste
Instructions
- Shred the cooked chicken into bite-sized chunks, removing any skin or bones.
- Halve the grapes, finely dice the celery, and mince the red onion. Roughly chop the toasted walnuts.
- In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, olive oil, salt, and pepper until smooth.
- In a large mixing bowl, combine the shredded chicken, grapes, celery, onion, and walnuts.
- Pour the dressing over the chicken mixture and gently fold until everything is evenly coated. Avoid stirring aggressively to prevent crushing the grapes.
- Let the salad rest in the refrigerator for at least 10 minutes to allow flavors to meld before serving.
Notes
Toast walnuts in a dry pan for 2-3 minutes until fragrant and let them cool before adding. Use full-fat Greek yogurt for the best creamy texture. If the salad is too watery, add more chicken or breadcrumbs. For meal prep, add grapes and walnuts just before serving to maintain crunch.
