Fluffy, creamy, and high-protein egg bites made with cottage cheese, spinach, and feta. These easy-to-make bites are perfect for meal prep and offer a delicious, low-carb breakfast option.

- 4 large eggs
- 1 cup (225g) full-fat cottage cheese
- 2 tablespoons heavy cream or half-and-half (optional)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup (30g) fresh baby spinach, packed
- 1/2 cup (60g) feta cheese, crumbled
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup mini muffin pan generously with butter or cooking spray.
- Add eggs, cottage cheese, heavy cream (if using), salt, pepper, and garlic powder to a blender. Blend on high for 45-60 seconds until completely smooth and frothy.
- Pour the blended mixture into a large bowl. Add fresh spinach and crumbled feta. Gently fold in with a spatula until evenly distributed.
- Scoop the mixture into the prepared muffin cups, filling each about 3/4 full. You should get about 12-15 mini bites.
- Bake for 15-20 minutes, or until the tops are set and slightly golden, and a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before removing. Serve warm, or store for later.
Notes
Ensure cottage cheese is blended completely smooth for a custard-like texture. If using frozen spinach, thaw and squeeze out all excess water to prevent soggy bites. For meal prep, cool completely before storing in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
