High-Protein Cottage Cheese Baked Oats: 4 Easy Meal Prep Breakfasts

  • Author: Harper
  • Total Time: 35-40 minutes
  • Yield: 4 servings 1x

Description

A creamy, high-protein breakfast made by blending cottage cheese with oats, eggs, and flavorings, then baking in ramekins. Perfect for meal prep, these baked oats stay moist and provide sustained energy.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (225g) 4% fat cottage cheese
  • 2 large eggs
  • 1/2 cup (120ml) milk (almond, whole, or oat)
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup (75g) wild blueberries (fresh or frozen)

Instructions

  1. Add cottage cheese, eggs, milk, maple syrup, vanilla extract, and salt to a blender. Blend on high for 45-60 seconds until completely smooth with no visible curds. Pour into a mixing bowl.
  2. Add rolled oats, baking powder, and cinnamon to the wet mixture. Stir well with a spatula until evenly combined. Let the mixture sit for 5 minutes to allow oats to soften.
  3. Preheat oven to 350°F (175°C). Lightly grease 4 ramekins with butter or cooking spray.
  4. Divide the oat mixture evenly among the 4 ramekins. Gently fold in the wild blueberries, pressing a few on top for presentation.
  5. Place ramekins on a baking sheet and bake for 25-30 minutes. The tops should be golden brown and slightly set, but centers should still have a slight jiggle.
  6. Let baked oats cool in ramekins for 5 minutes before serving. Store in airtight containers in the fridge for up to 5 days or freeze for up to 3 months.

Notes

Use old-fashioned rolled oats, not quick oats, for better texture. Ensure cottage cheese is blended until completely smooth to avoid lumps. Let oats rest for 5 minutes before baking to absorb liquid. Do not overbake to prevent dryness. Can be stored in the fridge for 5 days or frozen for 3 months.
