  • 1216 strips bacon, cut in half crosswise (or gluten-free bacon/turkey bacon/cheese strips)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons gluten-free flour blend (optional, for crispiness)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Wear gloves and slice jalapenos in half lengthwise. Use a small spoon to scrape out seeds and membranes. Place halves cut-side up on the baking sheet.
  3. In a small bowl, mix softened cream cheese, shredded cheese, green onions, garlic powder, smoked paprika, salt, and pepper until smooth.
  4. Spoon the cheese mixture into each jalapeno half, smoothing the top. Do not overfill.
  5. Wrap each stuffed jalapeno with bacon strips (or alternative wrap), starting at one end and wrapping diagonally to leave small gaps. Secure with a toothpick if necessary.
  6. Bake for 15-20 minutes until bacon is crispy and cheese is bubbly and golden.
  7. Let cool for 5 minutes before serving to allow filling to set slightly.
  8. Serve warm with gluten-free ranch or dairy-free sour cream for dipping.
