A quick, one-pan weeknight dinner that is gluten-free, dairy-free, and packed with protein. This skillet combines lean ground turkey with sweet potatoes and smoky spices for a comforting meal ready in just 20 minutes.
Ingredients
- 1 pound ground turkey (93% lean)
- 2 medium sweet potatoes (about 1 lb), peeled and diced into ½ inch cubes
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons olive oil or avocado oil
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ cup low-sodium chicken broth
- 1 tablespoon tomato paste
- Salt and black pepper to taste
- Optional: 1 can black beans, drained and rinsed
- Optional: 2 cups fresh spinach
- Optional: ¼ cup fresh cilantro, chopped
- Optional: Lime wedges for serving
Instructions
- Prep ingredients: Peel and dice sweet potatoes into ½ inch cubes, dice the onion, mince the garlic, and measure out spices.
- Heat oil in a large skillet over medium-high heat. Add ground turkey and break into small crumbles with a wooden spoon.
- Cook turkey until no longer pink, about 5 minutes. Remove turkey from pan and set aside on a plate.
- In the same skillet, add diced onions and cook for 2-3 minutes until softened. Add sweet potato cubes and cook for 3-4 minutes until edges caramelize.
- Add minced garlic, smoked paprika, cumin, and chili powder. Cook for 1 minute, stirring constantly, until fragrant.
- Pour in chicken broth and scrape up browned bits from the bottom of the pan. Stir in tomato paste until dissolved.
- Return cooked turkey to the pan. Stir everything together and simmer for 3-4 minutes until sweet potatoes are tender.
- Taste and adjust salt and pepper. If using, stir in black beans and spinach until heated/wilted.
- Remove from heat, garnish with fresh cilantro and a squeeze of lime, and serve immediately.
Notes
Dice sweet potatoes small (½ inch) to ensure even cooking. Use 93% lean turkey to prevent dryness. Smoked paprika is essential for the signature flavor. If sweet potatoes are still hard, add a splash of broth and cover to steam. Leftovers store well in the fridge for up to 4 days or freeze for up to 3 months.
