  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large russet potatoes, peeled and diced
  • 4 cups chicken broth (low-sodium)
  • 2 cups sharp cheddar cheese, freshly grated
  • 1/2 cup heavy cream
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard (yellow or Dijon)
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Toppings: Sour cream, chopped green onions, crispy bacon bits, extra shredded cheddar

Instructions

  1. Heat a large Dutch oven or stockpot over medium-high heat. Add ground beef and cook until browned, breaking it up with a wooden spoon. Remove beef and set aside, leaving about a tablespoon of fat in the pot.
  2. Add butter to the pot. Once melted, add diced onion and cook for 2-3 minutes until soft. Add minced garlic and cook for 1 minute until fragrant.
  3. Add diced potatoes, chicken broth, Worcestershire sauce, mustard, dried parsley, salt, and pepper. Stir to scrape up browned bits from the bottom.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  5. Return the browned beef to the pot. Stir in heavy cream and pickle relish. Simmer for 2-3 minutes to heat through.
  6. Remove the pot from the heat. Gradually add grated cheddar cheese, stirring constantly until melted and smooth. Adjust consistency with a splash of milk or cream if needed.
  7. Ladle into bowls and serve immediately with desired toppings.

Notes

Grate your own cheese to prevent graininess. Remove pot from heat before adding cheese to ensure smooth melting. Russet potatoes help thicken the soup naturally. Do not freeze if dairy is added; freeze the base without cream and cheese if meal prepping.
