  • 1 pinch flaky sea salt (e.g., Maldon)
  • 1 tablespoon unsweetened cocoa powder (optional)
  • ½ teaspoon espresso powder (optional)
  • Wood chips (hickory or applewood, for grilling)

Instructions

  1. Cut avocados in half, remove pits, and scoop flesh into a bowl. Mash roughly with a fork.
  2. Melt chocolate chips in a microwave (30-second intervals) or double boiler until smooth. Let cool to room temperature.
  3. Add mashed avocado, maple syrup, vanilla extract, coconut oil, and cocoa powder (if using) to a food processor. Pulse until completely smooth.
  4. With the processor running, slowly drizzle in the melted chocolate and add espresso powder (if using). Blend for 30-60 seconds until glossy and uniform.
  5. Prepare a charcoal or gas grill for indirect heat. If using charcoal, let coals burn down to gray ash. Place wood chips in a smoker box or foil packet on the coals.
  6. Spoon mousse into serving glasses or ramekins. Place them on the cooler side of the grill, away from direct heat. Cover loosely with foil.
  7. Smoke the mousse for 10-15 minutes at low heat (150-175°F / 65-80°C). Do not cook the mousse; just infuse with smoke.
  8. Remove from grill, sprinkle with flaky sea salt, and refrigerate for at least 30 minutes to set.
  9. Serve chilled with fresh berries, whipped coconut cream, or toasted nuts.

Notes

Ensure avocados are fully ripe and soft for a smooth texture. Do not add hot chocolate to the avocado as it will separate the mixture. The mousse tastes better after chilling overnight.
