  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • Zest of 2 lemons
  • ¼ cup (60ml) fresh lemon juice
  • ½ cup (120ml) whole milk, room temperature
  • 1 ½ cups fresh blueberries
  • 1 tablespoon extra gluten-free flour (for tossing berries)
  • 1 cup (120g) confectioners’ sugar, sifted
  • 23 tablespoons lemon juice (for glaze)
  • 1 teaspoon lemon zest (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup bundt pan thoroughly with butter or non-stick spray and dust with gluten-free flour, tapping out excess.
  2. In a medium bowl, whisk together the gluten-free flour, almond flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the room-temperature butter and granulated sugar on medium-high speed until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Mix in vanilla extract and lemon zest.
  5. With the mixer on low, gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with dry ingredients. Mix just until combined.
  6. Toss blueberries with the tablespoon of extra flour. Gently fold them into the batter using a spatula.
  7. Pour batter into the prepared bundt pan and smooth the top. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then invert it onto a cooling rack. Let it cool completely.
