- 2 cups low-moisture mozzarella cheese, shredded

- 0.25 cup fresh basil, chopped
- 2 tablespoons olive oil

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place chicken breasts between plastic wrap or in a ziplock bag and pound to ½-inch thickness.
- In a shallow bowl, mix almond flour, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- In a second bowl, whisk eggs with a pinch of salt and pepper.
- Dip chicken in egg wash, then press firmly into the almond flour mixture to coat both sides.
- Place breaded cutlets on the baking sheet, ensuring they do not touch.
- Lightly brush or spray the tops with olive oil.
- Bake for 15 minutes until edges are golden.
- Remove from oven and spoon ¼ cup marinara sauce over each cutlet.
- Sprinkle shredded mozzarella cheese over the sauce.
- Return to oven and bake for another 10 minutes until cheese is bubbly and browned.
- Optional: Broil for 1-2 minutes for extra color, watching closely to prevent burning.
- Let rest for 5 minutes before serving with fresh basil.
