Gluten-Free Chicken Parmesan: Easy Almond Flour Recipe

  • Author: Harper
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

A crispy, gluten-free chicken parmesan made with almond flour that stays crunchy under the sauce. This easy weeknight dinner is freezer-friendly and delivers the comfort of traditional chicken parm without the gluten.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1.5 cups finely ground almond flour
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 2 large eggs
  • 0.5 cup gluten-free panko breadcrumbs (optional, for extra crunch)
  • 2 cups low-moisture mozzarella cheese, shredded
  • 2 cups marinara sauce (gluten-free certified)
  • 0.25 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place chicken breasts between plastic wrap or in a ziplock bag and pound to ½-inch thickness.
  3. In a shallow bowl, mix almond flour, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. In a second bowl, whisk eggs with a pinch of salt and pepper.
  5. Dip chicken in egg wash, then press firmly into the almond flour mixture to coat both sides.
  6. Place breaded cutlets on the baking sheet, ensuring they do not touch.
  7. Lightly brush or spray the tops with olive oil.
  8. Bake for 15 minutes until edges are golden.
  9. Remove from oven and spoon ¼ cup marinara sauce over each cutlet.
  10. Sprinkle shredded mozzarella cheese over the sauce.
  11. Return to oven and bake for another 10 minutes until cheese is bubbly and browned.
  12. Optional: Broil for 1-2 minutes for extra color, watching closely to prevent burning.
  13. Let rest for 5 minutes before serving with fresh basil.

Notes

Use low-moisture mozzarella to prevent sogginess. Pound chicken evenly for consistent cooking. Almond flour browns faster than breadcrumbs, so watch closely during the final bake. For extra crispiness, use a wire rack on the baking sheet.
