Description

  • 3 large egg whites (room temperature)
  • 14 ounces (400g) sweetened condensed milk (full-fat)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 4 ounces (115g) bittersweet dark chocolate (60-70% cacao), chopped

Instructions

  1. Preheat oven to 325°F (165°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well until a thick, sticky paste forms.
  3. Let the mixture sit for 10 minutes to allow the coconut to absorb moisture.
  4. Using a small cookie scoop or ice cream scoop, portion the mixture onto the prepared baking sheets, leaving 2 inches between each cookie. Gently press down to flatten slightly.
  5. Bake for 15-18 minutes, or until edges are light golden brown and centers still look soft.
  6. Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  7. While cookies cool, melt the chopped dark chocolate in a microwave-safe bowl in 15-second intervals, stirring until smooth. If too thick, add a teaspoon of coconut oil.
  8. Transfer chocolate to a zip-top bag with a snipped corner and drizzle over cooled macaroons.
  9. Let chocolate set at room temperature for 30 minutes or in the fridge for 10 minutes.

Notes

Ensure egg whites are free of yolk for best whipping structure. Do not overbake as coconut continues to dry out while cooling. Store in an airtight container at room temperature for up to 5 days. Can freeze dough scoops for up to 3 months.
