  • 8 ounces (225g) Aged Parmesan (Parmigiano-Reggiano), grated or crumbled
  • 8 ounces (225g) Brie or Camembert, broken into chunks
  • 4 ounces (115g) Blue Cheese (Gorgonzola or Roquefort), wedges or crumbles
  • 4 ounces (115g) Prosciutto or Soppressata, thinly sliced
  • 46 cloves Fresh Garlic, peeled and thinly sliced
  • 1/2 cup (60g) Marcona Almonds, toasted
  • 1 small chunk Honeycomb (46 ounces / 115-170g)
  • 1 box assorted Crackers or Crostini (water crackers, seeded crackers, toasted baguette slices)
  • 1 bunch Fresh Herbs (Thyme or Rosemary), for garnish
  • Optional: Grapes, figs, apricots, olives, or pickled onions

Instructions

  1. Prep ingredients: Slice prosciutto into strips or folds. Grate or crumble Parmesan. Break Brie into irregular chunks. Peel and thinly slice garlic cloves. Toast almonds if not already done.
  2. Place cheeses on the board: Position Brie in the center or slightly off-center. Scatter Parmesan crumbles around it. Place Blue cheese in small wedges or crumbles nearby, leaving space between items.
  3. Arrange meats and nuts: Fold prosciutto loosely and tuck it around the cheeses to create texture. Scatter Marcona almonds in the empty spaces to fill gaps and add crunch.
  4. Add the honeycomb: Break off a piece of honeycomb and place it prominently on the board as a focal point. Break into bite-sized chunks if hard, or leave larger if soft.
  5. Fill the gaps: Place crackers around the edges or in the center, leaning them against the cheese for height. Add any optional fruits, olives, or pickled items.
  6. Garnish and serve: Top with fresh thyme or rosemary sprigs. Serve immediately at room temperature. If cheese was cold, let it sit out for 30 minutes before serving.

Notes

Cheese tastes best at room temperature; take Brie and Blue cheese out of the fridge 30 minutes before serving. Do not overcrowd the board; leave negative space for elegance. Slice garlic thinly to reduce the raw bite. Honeycomb is sticky, so provide napkins or small forks.
