  • 2 packages instant ramen noodles (seasoning packets discarded)
  • 2 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 2 cups water
  • 2 large eggs
  • 2 stalks green onions, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame seeds (optional, toasted)
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Bring a small pot of water to a boil. Gently lower eggs into the water and set a timer for 6.5 minutes for jammy eggs.
  2. Once the timer goes off, immediately transfer eggs to a bowl of ice water to stop cooking. Peel and slice in half just before serving.
  3. In a small skillet, melt butter over medium heat. Add minced garlic and cook for about 1 minute until golden and fragrant. Do not burn. Remove from heat.
  4. In a medium saucepan, bring 2 cups of water to a rolling boil. Add ramen noodles and cook for 2-3 minutes until tender but still slightly firm.
  5. Drain the noodles, but reserve 1/4 cup of the starchy noodle water.
  6. Return drained noodles to the pot or a large bowl. Add the melted butter and garlic mixture, soy sauce, and reserved noodle water.
  7. Toss vigorously to emulsify the sauce, coating every strand of noodle.
  8. Place noodles in a bowl, top with the halved jammy egg, and sprinkle with green onions, red pepper flakes, and sesame seeds.
  9. Drizzle with sesame oil if using and serve immediately.

Notes

For the best jammy egg, time the boiling water carefully (6-6.5 minutes). Save the starchy noodle water; it helps bind the butter and soy sauce into a creamy sauce. Do not overcook the garlic or it will become bitter. This recipe is best made fresh as noodles can get soggy if stored.
