Description
A creamy, spicy, and easy slow-cooker buffalo chicken dip perfect for game day. This kid-friendly recipe uses pantry staples and requires minimal prep, making it the ultimate stress-free tailgate snack.
Ingredients
Scale
- 8 oz cream cheese, softened
- 1 cup buffalo sauce
- 2 cups shredded cheddar cheese
- 2 cups cooked and shredded rotisserie chicken
- 1 teaspoon garlic powder
- 1 packet (1 oz) dry ranch dressing mix
- 1/2 cup blue cheese dressing
- Crunchy chips, celery sticks, or crackers for serving
Instructions
- Shred the rotisserie chicken into bite-sized pieces using a fork.
- Cut the cream cheese into small cubes to help it soften faster, or microwave briefly.
- In a large mixing bowl, combine the softened cream cheese, buffalo sauce, garlic powder, and ranch dressing mix. Stir until smooth.
- Stir in the shredded cheddar cheese and shredded chicken until evenly distributed.
- Transfer the mixture to a 4-quart slow cooker.
- Cover and cook on low for 2-3 hours, stirring once halfway through, until hot and bubbly.
- Serve immediately with chips, celery, or crackers.
Notes
Ensure cream cheese is softened to avoid lumps. Stir halfway through cooking to ensure even melting. For a milder dip, use mild buffalo sauce. For a spicy version, use hot sauce and add diced jalapeños. The dip can be kept warm on the ‘warm’ setting for hours. Do not freeze as the dairy may separate.
