Fluffy Protein Pancakes: Easy 3-Ingredient High-Protein Breakfast

  • Author: Harper
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

These fluffy protein pancakes are made with just three simple ingredients: Greek yogurt, ripe bananas, and eggs. They are high-protein, gluten-free, and ready in about 15 minutes, making them the perfect quick and healthy breakfast.

Ingredients

Scale
  • 1 cup (240g) plain, non-fat or low-fat Greek yogurt
  • 2 medium ripe bananas (about 1 cup mashed)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Cooking spray or butter for greasing the pan

Instructions

  1. Mash the bananas in a medium bowl until chunky or smooth.
  2. Add the Greek yogurt, eggs, vanilla extract, cinnamon, salt, and baking powder to the bowl.
  3. Mix the ingredients until just combined. Do not overmix; lumps are acceptable.
  4. Heat a non-stick skillet or griddle over medium-low heat for 2-3 minutes.
  5. Lightly grease the pan with butter or cooking spray, wiping off excess with a paper towel.
  6. Pour 1/4 cup of batter onto the pan for each pancake. Do not spread the batter.
  7. Cook for 3-4 minutes until bubbles form on the surface and pop, leaving holes, and the edges look dry.
  8. Flip the pancakes carefully with a spatula.
  9. Cook for another 1-2 minutes on the second side until golden brown.
  10. Serve immediately with desired toppings, or keep warm in a 200°F oven.

Notes

Use thick Greek yogurt (like Fage or Chobani) to ensure the pancakes hold their shape. If using regular yogurt, strain it first. Ensure baking powder is fresh for maximum fluffiness. Do not overmix the batter to avoid dense pancakes. For extra fluffiness, separate eggs, whip whites to stiff peaks, and fold into batter. These freeze well for meal prep.
