  • ¾ cup buttermilk
  • ¼ cup unsalted butter, melted
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • ½ cup unsalted butter, softened (for honey butter)
  • 2 tablespoons honey
  • ½ teaspoon fine sea salt (for honey butter)
  • ¼ teaspoon cinnamon (for honey butter)

Instructions

  1. Roast or boil sweet potatoes until tender, mash until smooth, and let cool to room temperature.
  2. In a small bowl, whisk together softened butter, honey, sea salt, and cinnamon to make the honey butter. Set aside.
  3. Preheat grill or smoker to 350°F-375°F (175°C-190°C) using indirect heat with applewood or hickory wood for smoke.
  4. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, smoked paprika, and cayenne.
  5. In a separate bowl, whisk eggs, then add buttermilk, melted butter, and mashed sweet potatoes.
  6. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  7. Preheat a 9-inch cast iron skillet on the grill grate for the last 10 minutes of preheating, then grease with butter or oil.
  8. Pour batter into the hot skillet and place on the grill away from direct heat.
  9. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. Let cool for 10-15 minutes before slicing and serving with honey butter.

Ensure sweet potatoes are completely smooth and cool to avoid cooking the eggs. Do not overmix the batter to prevent toughness. Preheating the skillet creates a crispy crust. Use mild woods like applewood or cherry for best flavor.
