Instructions

  1. In a medium bowl, whisk together the flour, baking soda, salt, 1 teaspoon cinnamon, ½ teaspoon cardamom, ½ teaspoon ginger, ¼ teaspoon cloves, and ¼ teaspoon black pepper. Set aside.
  2. In a large bowl, beat the room-temperature butter, 1 cup granulated sugar, and ½ cup brown sugar together until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until fully combined, scraping down the sides of the bowl.
  4. Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
  5. Cover the bowl and refrigerate the dough for at least 30 minutes (or up to 24 hours) to firm up the butter and meld flavors.
  6. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
