Ingredients

Instructions
- In a medium bowl, whisk together the flour, baking soda, salt, 1 teaspoon cinnamon, ½ teaspoon cardamom, ½ teaspoon ginger, ¼ teaspoon cloves, and ¼ teaspoon black pepper. Set aside.
- In a large bowl, beat the room-temperature butter, 1 cup granulated sugar, and ½ cup brown sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until fully combined, scraping down the sides of the bowl.
- Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
- Cover the bowl and refrigerate the dough for at least 30 minutes (or up to 24 hours) to firm up the butter and meld flavors.
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a small bowl, mix ½ cup granulated sugar, 1 tablespoon cinnamon, and 1 teaspoon chai spice blend for the coating.
- Scoop dough into 1.5-tablespoon balls and roll them in the sugar-spice mixture until fully coated.
- Place dough balls on baking sheets, spacing them about 2 inches apart.
