  • 1/4 cup (30g) chopped pecans
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon butter or coconut oil

Instructions

  1. Toast the pecans: Heat a small skillet over medium heat. Add chopped pecans and toast for 2-3 minutes, stirring constantly, until fragrant. Remove from heat and let cool.
  2. Prepare the crunch topping: Once pecans are cooled, toss them with 1 tablespoon maple syrup, 1/2 teaspoon cinnamon, and 1 teaspoon butter or coconut oil. Set aside.
  3. Mix the oat base: In a mixing bowl, combine rolled oats, pumpkin puree, milk, 2 tablespoons maple syrup, vanilla extract, 1 teaspoon cinnamon, nutmeg, ginger, cardamom, salt, and chia seeds (if using). Stir until well combined and smooth.
  4. Jar the mixture: Divide the oat mixture evenly among 4 mason jars or containers. Press down to remove air pockets.
  5. Soak: Cover jars and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
