Description

Ingredients

  • 1 cup pure pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 cup water
  • 2 tablespoons heavy cream
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp nutmeg, 1/4 tsp cloves, 1/4 tsp allspice)
  • 1/2 teaspoon salt
  • 2 shots espresso or 60ml strong coffee
  • 1 cup milk (whole, oat, almond, or soy)
  • Whipped cream (optional)
  • Extra spice dusting for topping (optional)

Instructions

  1. In a saucepan, combine water, brown sugar, maple syrup, heavy cream, pumpkin puree, pumpkin pie spice, and salt. Whisk to combine.
  2. Heat over medium heat until sugar dissolves and mixture is smooth.
  3. Reduce heat to low and simmer gently for 5-7 minutes, stirring occasionally, until syrup thickens slightly and coats the back of a spoon.
  4. Remove from heat and let cool completely to prevent bitterness in the coffee.
  5. Brew espresso or strong coffee.
  6. Heat milk until steaming hot (around 150°F / 65°C), ensuring it does not boil.
  7. Froth the milk using a handheld frother until velvety microfoam forms.
  8. Add 2-3 tablespoons of cooled pumpkin syrup to a mug and stir into the hot coffee.
  9. Pour frothed milk over the coffee.
  10. Top with whipped cream and a dusting of cinnamon or pumpkin spice if desired. Serve immediately.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. For a smoother texture, strain the syrup after cooling. The syrup can be made in advance and stored in the fridge for up to 2 weeks or frozen for 3 months. For best foam, start with cold milk before heating and frothing.
