Description
A cozy, homemade pumpkin spice hot chocolate made with real ingredients and topped with caramelized toasted marshmallows. This rich, spiced drink comes together in just 15 minutes.
Ingredients
- 4 cups full-fat milk
- 1/2 cup pumpkin puree (100% pure, not pie filling)
- 4 ounces bittersweet chocolate (chopped or high-quality chips)
- 1/2 cup heavy cream
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon extra cinnamon
- 1 teaspoon pure vanilla extract
- 1 cup large marshmallows
- 1 tablespoon butter (melted)
- Flaky sea salt (optional)
Instructions
- Measure spices and mix pumpkin pie spice, extra cinnamon, and vanilla in a small bowl. Chop chocolate if using bars.
- Pour milk and pumpkin puree into a saucepan over medium heat. Whisk constantly to break up the pumpkin and prevent clumping. Heat until hot and steaming, but do not boil.
- Reduce heat to low. Add chopped chocolate and heavy cream. Whisk gently until chocolate is completely melted and mixture is glossy.
- Stir in the spice blend and vanilla. Simmer for 1-2 minutes to meld flavors. Adjust consistency with more milk if too thick.
- Line a baking sheet with parchment paper. Spread marshmallows in a single layer and brush lightly with melted butter. Broil for 1-2 minutes until golden brown, watching closely to prevent burning.
- Pour hot chocolate into mugs. Top generously with toasted marshmallows and sprinkle with flaky sea salt if desired. Serve immediately.

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling, to avoid excessive sweetness. Whisk the pumpkin into the milk while it is still cold or warm to prevent lumps. Watch marshmallows closely under the broiler as they burn quickly. For a dairy-free version, substitute oat or coconut milk and use dairy-free chocolate.
