Description

  • ½ cup granulated sugar (100g)
  • ¼ cup light brown sugar (50g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon ground cinnamon (2g)
  • ¼ teaspoon nutmeg (0.5g)
  • 1 tablespoon cornstarch (8g)
  • 1 teaspoon vanilla extract (5ml)
  • 1 cup old-fashioned rolled oats (90g)
  • ¾ cup all-purpose flour (95g)
  • ¼ cup granulated sugar (50g)
  • ¼ cup light brown sugar (50g)
  • ½ cup unsalted butter (115g), cold and cubed
  • 1 teaspoon ground cinnamon (2g)
  • ¼ teaspoon salt (1.5g)
  • Optional: ½ cup chopped pecans or walnuts (50g)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, toss sliced apples with ½ cup granulated sugar, ¼ cup brown sugar, lemon juice, 1 teaspoon cinnamon, nutmeg, cornstarch, and vanilla. Let sit for 10 minutes.
  3. In a separate bowl, whisk together rolled oats, ¾ cup flour, ¼ cup granulated sugar, ¼ cup brown sugar, 1 teaspoon cinnamon, and salt.
  4. Add cold cubed butter to the dry mixture and mix with a fork or fingers until it resembles coarse crumbs with some pea-sized pieces.
  5. Pour the apple mixture into a 9×13 inch baking dish and spread evenly.
  6. Sprinkle the streusel topping evenly over the apples, covering all edges.
  7. Bake for 45-50 minutes until topping is golden brown and filling is bubbling. Cover with foil if topping browns too quickly.
  8. Let cool completely before portioning to prevent sogginess.
  9. Divide into four equal portions and store in airtight containers.

Notes

Use cold butter for a flaky topping. Cool completely before storing to avoid condensation. Can be frozen for up to 3 months. For gluten-free, use GF flour and certified GF oats. For dairy-free, substitute butter with cold coconut oil or dairy-free butter stick.
